A Currambine supermarket bakery had a gantry that was gradually coming apart during production runs.
What Was Happening
The left-hand gantry bearing had worn to the point where the chamber cassette was working loose. This had been identified and documented at a prior visit. The bearing replacement was scheduled and carried out the following month. Production continued between visits, but the fault was tracked and a return trip was booked before it became a stoppage.
How It Was Handled
Benjamin attended site in July, signed in, and waited for staff to clear the oven before starting work. The worn bearings were replaced and the gantry surface was prepared and rebuilt to accept the new components properly. The oven was tested before Benjamin left. It was running correctly before the site was handed back.
The Result
The Technobake returned to full production operation. The operator received a documented service record covering the fault, the work completed, and the verified outcome. The repair had been planned, not reactive.
Why PEMS
The fault was identified and logged at one visit, then scheduled and resolved at the next. The operator was not chasing an emergency. The documentation trail covered both visits.
Perth supermarket bakeries run on tight production windows. Equipment faults that are caught, documented, and scheduled before they cause a stoppage are a different cost category from faults that surface mid-run.
If your bakery or production kitchen equipment is on a service program that tracks open items between visits, you are already ahead. If it is not, that is worth a conversation. Contact PEMS on 08 7095 3550 or visit pemservices.com.au to arrange a site assessment.
