A Technobake deck oven at an Aveley supermarket bakery was throwing smoke during preheat. The oven was mid-cycle when the first visit arrived in late December, so the technician waited for the cook to finish before isolating the unit. That decision alone tells you something about how a working bakery operation needs to be managed during a service call.

What Was Happening

The exhaust fan had failed and needed replacement. Once that was done and the oven was back in service, staff ran a preheat and found smoke filling the left-hand side of the oven. The unit was isolated again. Inspection found moisture at the base of the oven and a suspect top element. The element was cleaned and retested. Smoke continued. The top element was disconnected and the oven was preheated again. No smoke. Staff completed a full cook. No issues.

How It Was Handled

The technician worked around the bakery's production schedule on both visits, waiting for active cooks to complete before isolating the oven. The exhaust fan was replaced and a loose exhaust extension was refitted and secured. The smoking fault was traced systematically with the element disconnected to confirm the cause before the oven was returned to production. A replacement element was ordered on confirmation of the fault.

The Result

The oven was returned to operation the same day with the exhaust fan replaced and the smoke fault contained. The operator received a documented finding with a clear next step. The element replacement visit was already scheduled before the technician left site.
