Dry-Aged Fridge Failure Fremantle Hotel | PEMS Commercial Kitchen

A Fremantle hotel's dry-aged fridge was sitting at 24 degrees on a Tuesday morning. In a kitchen where dry-aged product takes weeks to develop, that is not a minor blip. It is a potential write-off and a food safety record that follows the site through its next audit.

What Was Happening

The fridge had been running warm without triggering a callout. By the time the fault was caught, the unit had been off its operating temperature long enough to require a logged food safety response. The fridge was installed in a tight spot under a canopy, meaning inspection required removing the curtain and rail before anything could even be assessed. One technician could not safely move it alone.

How It Was Handled

The initial site assessment confirmed the space constraints immediately. Rather than attempt a rushed pull-out during breakfast service, the attending technician coordinated with kitchen staff, flagged the access requirements, and returned the following morning with a second technician once service had cleared. The fridge was pulled clear, inspected fully, and a loose electrical connection to the condensing unit was found and rectified. The unit was monitored through its full temperature recovery before the job was closed.

The Result

The fridge was reinstated in position, confirmed at operating temperature, and the job documented in full across both attendance dates. The operator received a clear record of what was found, what was done, and how it was verified.

Why PEMS

Access constraints in working kitchens are routine on paper and genuinely disruptive in practice. Returning with the right number of technicians at the right time, rather than forcing a result during service, kept the kitchen running and the documentation clean.

Operators managing high-value product storage in tight-access kitchens are welcome to contact PEMS to discuss scheduled inspections and response planning. Call 08 7095 3550 or visit pemservices.com.au.
