A supermarket deli kitchen in Riverton had its Convotherm oven go dark mid-shift in August.
Not a gradual fault. The touchscreen went blank after a routine kitchen hose-down, and the oven stopped accepting inputs entirely.
What Was Happening
Water had worked its way behind the front panel. The panel had been partially loose, and a standard kitchen clean was enough to kill the screen. The oven was out of service during a live trading period. A second visit, weeks later, identified that the air outlet hose had also deteriorated and needed replacement. The front panel surface itself was worn, affecting calibration.
How It Was Handled
Both visits were attended same-shift. On the first, a replacement screen was fitted from van stock and tested before the tech left site. On the second, the deteriorated hose and clamps were replaced, the touchscreen was recalibrated against the worn panel, software was updated, and the operator's recipes were reloaded. A corn cycle was run to confirm the oven was performing correctly before sign-off.
The Result
The oven was back in full operation with the operator's recipe library intact. Both visits were documented, including the note that the cooking chamber shows signs of historic leaks. That detail is now on record for the next service review.
Why PEMS
The recipe reload and function test before leaving site is the difference between handing back an oven and handing back a working kitchen. The chamber condition note gives procurement a factual basis for forward planning, not a surprise.
