A supermarket bakery runs on timing. When the proving equipment stops working, the bread program stops with it.

At a major supermarket in Midland, two of the three provers on site had stopped cooling. The bakery team had flagged it. The production schedule was already being adjusted around the fault.

What Was Happening

The provers were not maintaining temperature or humidity. On inspection, the condenser units were heavily soiled and the compressor on the affected units had lost gas. A refrigeration specialist was required before the job could progress. The site continued operating in a reduced capacity while the assessment was completed and parts were sourced.

How It Was Handled

A detailed inspection identified the evaporator as the source of the gas loss. It could not be repaired. The unit was temporarily reassembled so the prover could still be used for part of its cycle while the replacement was arranged. On return, the faulty evaporator was replaced, the system was recommissioned, and full proving and cooling function was verified before the technician left site.

The Result

Both affected provers were returned to full operation. Cooling, heating, and humidity function all tested within spec. The operator received complete documentation across the inspection, interim arrangement, and final recommission visits.
