A Fremantle commercial kitchen had a new combi oven installed and needed it commissioned properly before service. The site had existing water supply and drainage that needed to match the new unit. Getting it wrong would mean a kitchen that looked operational but carried compliance risk every time staff ran a clean cycle.

What Was Happening

The new oven went in, but the existing drainage on site was undersized for the volume it needed to handle during a cleaning cycle. Water was overflowing through the wall onto the ground. Separately, the fryer position next to the oven fell short of required clearance distances, a known fire and safety risk that had not been picked up during the install planning.

How It Was Handled

Ryan worked through the water supply and drainage connections to match what was on site and get the oven running correctly for cooking. He identified the drainage limitation, explained the overflow risk clearly to the site contact, and documented both issues in full. The fryer clearance issue was raised directly with the operator, with a heat shield identified as the minimum required interim measure. Staff were shown how to operate the new oven and written instructions were left on site.

The Result

The oven was commissioned and cooking correctly. Two compliance issues, drainage and fryer clearance, were documented and handed to the operator to action. The kitchen was not left with hidden risk. The operator knew exactly what remained outstanding and why.
