Commercial Kitchen Gas Griddle Replacement, Perth Hotel

A Perth hotel griddle had been running on a kinked, deteriorated gas hose. The equipment was in daily use, and the hose condition was not visible during normal service. It only became apparent when the appliances were moved to gain access. In a busy hotel kitchen, that is not a discovery anyone wants to make during a repair.

What Was Happening

The existing gas griddle had reached the end of its working life and was due for replacement. A national catering equipment supplier engaged PEMS to complete the replacement as quoted. When the line was moved to gain access, the gas hose behind the equipment was found kinked and in poor condition. Gas connections to nearby equipment were a legacy configuration that did not meet current compliance requirements. Behind the appliances, grease and oil had accumulated to a level that represented a genuine fire risk. None of this was on the work order. All of it needed to be dealt with or documented.

How It Was Handled

The existing griddle was disconnected and relocated to clear access. The old hose was removed and a new one installed. A new regulator was fitted to the replacement griddle, and it was secured with a wall restraint and chain so it could not be pulled forward and strain the hose. Full gas leak testing and operational checks were completed before handover. The site contact was advised directly about the non-compliant connections on adjacent equipment and the grease accumulation behind the line, and both findings were written into the job report. When a gap in communication with kitchen staff meant part of the handover was missed, the PEMS technician returned the same day and completed it without delay.

The Result

The kitchen was handed back operational and gas-compliant on the new griddle, with a clear written record of what was found, what was completed, and what was recommended. The site contact had specific, actionable information about the remaining risks on the line rather than a vague warning. The install was quoted and completed at no additional charge to the customer beyond the agreed scope.
