Three hours before Thursday service at a Fremantle commercial kitchen, four deep fryers were down.
For a busy kitchen running full covers, that is not a bad morning. That is a crisis.
What Was Happening
All four fryers had stopped working. The fault traced back to the gas supply hoses, which had kinked badly enough to cut off gas flow. Not a fryer fault. Not a burner fault. Four hoses running in a configuration that made kinking almost inevitable. The kitchen had flagged pilot issues earlier in the week. The root cause was already waiting to be found.
How It Was Handled
Martin attended the same afternoon and traced the fault across all four fryers before any work began. Replacement hoses were sourced and fitted once approval was confirmed. Every fryer was pressure tested and confirmed operational before the job was closed. Two follow-up notes went back to the operator: the floor and wall behind the fryers carried a significant fat and oil buildup that would need clearing before any future attendance, and the gas pipework at the rear should be reconfigured when new fryers go in so the hoses sit correctly and cannot kink again.
The Result
All four fryers operational before service. Full pressure test documented. The operator received written notes covering both the immediate fix and the two conditions that needed addressing to prevent a repeat.
Why PEMS
The notes on fat buildup and pipework configuration were not billable extras. They went into the report because the next callout to the same site should not be for the same reason.
