A contract catering operator at a remote airport hotel site needed their commercial kitchen stripped out and rebuilt in a single day. New equipment arriving. Old appliances coming out. What Was Happening

The outgoing kitchen held multiple gas appliances that needed to be safely disconnected and removed before new equipment could land. The incoming fit-out included a combi oven, a rebuilt cooking line, and a range hood. Some parts for the hood arrived incomplete. Some consumables for commissioning the combi were not on site. The job could not wait for a second visit.

How It Was Handled

The PEMS team coordinated the trailer, delivered and unloaded equipment, and assembled and commissioned the combi oven on the day. Where parts were missing, the technician adapted, adjusting the water supply connection to suit site conditions. The combi ran heat, steam, and a full clean cycle before sign-off. The incomplete range hood was documented clearly so the operator had a written record of what remained outstanding and why. Gas compliance work across the cooking line, including bumper rails and electrical connection for the oven, was completed to standard.

The Result

The kitchen came back online with the new cooking line operational and fully documented. Outstanding items from the incomplete delivery were captured in the job record, giving the operator a clear handover and a defined path to full commissioning.
