A commercial kitchen operator in Palmyra had a new combi oven arriving. Getting the unit on site was the straightforward part. What mattered was everything that had to happen before the first tray went in.

What Was Happening

The site was taking delivery of a new UNOX combi oven, complete with a matched extraction hood and a purpose-built stand. The installation required a reverse osmosis water system to be set up and integrated, a pressure management assembly fitted, and the full unit commissioned to manufacturer specification before any cooking could begin. Nothing here was plug-and-play.

How It Was Handled

PEMS technician Mason coordinated the install date directly with the site contact and completed the full commissioning sequence in a single attendance. The stand was assembled and the oven positioned correctly. The extraction hood was fitted. The RO water system and pressure management were set up and integrated. Internet connectivity for the oven was established. Humidity calibration, firmware update, parameter input, pin counter reset, and a wash cycle were all completed before a cooking session was initiated. A full installation checklist was completed and photographs forwarded to UNOX as required. The work was delivered within the approved fixed-price scope.

The Result

The kitchen went live with the oven fully commissioned, documented, and registered with the manufacturer. The operator received a completed installation checklist and photographic record. No follow-up attendance was required.

Why PEMS

Commissioning a new combi is not just a delivery job. Done correctly, it sets the service baseline, activates manufacturer support, and means the first cook on a new piece of capital equipment is not also the first test of whether it was set up properly.

Commercial kitchen operators across Perth trust PEMS to handle new equipment installations from delivery through to full commissioning. To discuss a planned installation or an upcoming equipment upgrade, call 08 7095 3550 or visit pemservices.com.au.
