A commercial kitchen operator in Mandurah had three fryers down and a morning service approaching.

What Was Happening

All three fryers had developed ignition problems. Two had worn original components that were no longer reliable enough to hold a flame consistently. The third had failed entirely. Beyond the ignition issues, the barrier separating one fryer from the adjacent open burner had been removed at some point, creating a fire risk that nobody had flagged. The range hood above the fryers had a grease catch problem that was sending oil and moisture dripping directly into the flue.

How It Was Handled

PEMS attended site and worked through all three fryers. Worn components were replaced on two units, and the third received a heavy-duty replacement part rather than a standard original in response to the pattern of wear. Pilot flames were adjusted to reduce the load on those parts going forward. The barrier between the fryer and the open burner was reinstated. The range hood issue was identified and documented. The attending technician spoke directly with the site contact, Kate, about upgrading to heavier-duty parts across the fryers as a practical way to reduce how often the same faults recur.

The Result

All three fryers were operational and tested before the technician left site. The operator received a documented report covering every fault found, every repair completed, and the two safety and maintenance recommendations for future action.
