A combi oven at a Perth hotel kitchen had been dripping internally for weeks. A previous attendance had addressed the pipework above the unit. The kitchen reported the problem had not resolved. With hotel food service running daily, a persistently leaking oven is not a deferred problem.
What Was Happening
Condensation from pipework routed above the oven was finding its way inside the unit. The original attendance had altered the pipework configuration, but the kitchen confirmed moisture was still present after that work. Left unresolved, ongoing internal moisture shortens equipment life and creates food safety risk inside a working oven cavity.
How It Was Handled
PEMS technician Tore attended site in July to investigate the continued leak report. The diagnosis focused on whether the earlier pipework alteration had fully resolved the condensation path, and whether any secondary moisture source existed. The work was carried out within a pre-approved scope, with UNOX Australia notified as required given the equipment was under their service program.
The Result
The investigation and works were completed with UNOX informed at each stage. The operator received a fully documented outcome. The kitchen had clarity on what was done and why, rather than an open fault that kept recurring.
Why PEMS
Managing a warranty or manufacturer-program callout requires coordination, not just a technician. PEMS handled the site work and the manufacturer communication as a single process, so the operator did not have to manage two conversations.
If hotel or hospitality kitchen equipment in your portfolio keeps returning faults after a first attendance, a documented reassessment is worth scheduling. Contact PEMS on 08 7095 3550 or visit pemservices.com.au.
