A supermarket bakery in Armadale had a problem most customers never think about. The bakery prover, the piece of equipment that holds dough at precise conditions overnight before the morning bake, had developed a refrigerant leak. With the morning production schedule at risk, the site needed a clear diagnosis and a plan, not guesswork.

What Was Happening

The prover was short of refrigerant and losing pressure slowly. A thorough pressure test confirmed the leak was inside the evaporator coil, in a position where it could not be repaired in place. Running the unit further risked the morning bakery schedule and created an ongoing compliance issue with refrigerant handling. The decision was made to disconnect the refrigeration circuit and operate the prover in heating mode only while a replacement coil was sourced and approved.

How It Was Handled

PEMS documented the fault in full, attached the technical assessment to the work order, and provided the operator with the information needed to approve a replacement component. Once the new evaporator coil was sourced and approved, the system was decommissioned, the faulty coil replaced, and the unit fully recommissioned. The team verified cooling performance down to temperature and confirmed heating operation before the site was handed back.

The Result

The bakery prover was returned to full operation, with both cooling and heating cycles confirmed and documented. The operator received a complete service record covering the fault diagnosis, interim arrangement, component replacement, and recommission verification.

Why PEMS

Refrigerant work in commercial equipment carries regulatory obligations around gas reclaim and handling. PEMS managed the full refrigerant decommission and recharge process within those requirements, so the operator carried no compliance exposure during or after the repair.

For supermarket and food production facilities across Perth managing equipment like bakery provers, refrigerated display, and cold rooms, PEMS provides fault diagnosis, documented repairs, and compliant refrigerant handling.
