Opening paragraph:
A new Oporto location in Butler was ready to open. The commercial kitchen was fitted out, the team was on site, and the UNOX combi oven needed to be commissioned before service could begin. Then Western Power cut the electricity to the whole strip of restaurants.
What Was Happening
The power outage was not a fault on site. It affected the entire restaurant strip. With no power available, commissioning could not proceed. But the site still needed preparation work completed so the kitchen could go live the moment power returned. A stand had to be built, a drain plumbed, and a reverse osmosis water treatment system assembled and ready.
How It Was Handled
The first visit completed all the physical preparation work. The stand was built, the drain was plumbed, the water treatment system was assembled, and a heat shield was installed. When it became clear additional parts were needed to complete the water treatment setup, those parts were sourced and brought to site on the return visit two days later.
On the second visit, the oven was wired, the water treatment system was completed, and full calibration cycles were run and tested. The site contact received a walkthrough of the oven's maintenance requirements before the technician left.
The Result
The kitchen was commissioned, calibrated, and handed over ready for service. The site contact left with documented answers to their maintenance questions. The install was completed in full across two visits, with parts sourced between them.
Why PEMS
UNOX equipment commissioning requires more than fitting and switching on. Water treatment, calibration, and site-specific setup all affect how the oven performs and how long it lasts. PEMS carries the authorisation and the process to do this correctly from day one.
