Rotisserie Oven Repair Noranda - Commercial Kitchen Case Study

A leading food service group runs a high-volume rotisserie operation at their Noranda supermarket. When one side of the unit stopped mid-run on a Sunday following a loud bang, the kitchen faced a direct hit to one of their highest-turnover product lines. Getting it back safely, and fast, was the only priority.

What Was Happening

The right-hand chamber of the rotisserie had failed mid-cycle. The unit showed visible mechanical damage across multiple points simultaneously. A belt had come off, a tensioner had failed, fixing hardware was missing, and supporting arms were bent. This was not a minor adjustment. The chamber could not be operated safely until a full strip-down and rebuild had been completed.

The left-hand chamber was still operational. The site was advised to run on that side only while parts were sourced and the repair was scoped.

How It Was Handled

An initial site attendance assessed the full scope of damage and made the unit safe. A detailed parts list was raised from that visit. When parts arrived, the unit was stripped back to the motor and bearing assembly. The damaged drive shaft required custom fabrication before the rebuild could proceed. Once reassembled, all functions were tested and confirmed operational before the unit was returned to service.

The Result

Both chambers returned to full service. The operator received complete documentation across both visits, covering the initial make-safe, the parts requirement, the fabrication work, and the final operational sign-off.

Why PEMS

The repair required both mechanical fault-finding and on-site fabrication of a damaged component. Having both capabilities in a single contractor meant no handoff, no delay waiting on a specialist, and no gap in the audit trail between visits.

Operators running high-volume equipment across multiple sites know that not every fault fits a standard parts replacement. If your current contractor covers fabrication work and documents it end-to-end, it is worth confirming that before the next unexpected failure.
