Aloft Perth runs a rooftop kitchen. When a second combi oven needed to go in, the job was not a standard swap. It involved moving equipment through a hotel, working at height, fabricating a new stand, and connecting to existing services on a floor most maintenance contractors would not have planned for.

What Was Happening

The site had a non-operational oven that still had usable components. Rather than sourcing new parts on a lead time, the plan was to harvest what was needed and get the second oven running as quickly as possible. The combi needed a proper stand, correct waste and water connections, and a compliant electrical hookup. None of that was optional. A rooftop kitchen running service without a fully commissioned oven is a compliance and capacity problem at the same time.

How It Was Handled

The scope was assessed on site before anything moved. Lifting equipment was arranged, a route through the hotel to the top floor was confirmed, and the stand was assembled at the new location. The two oven sections were separated, the top unit relocated and secured. Wheels were fitted to both the new stand and the existing oven for future access. Waste pipework was modified, water supplies tied in, and detergent lines run to existing bottles. Electrical work was completed through the isolator. The additional parts identified during the harvest were documented for a follow-up quote so the operator had visibility of what was coming before it arrived.

The Result

The second oven was installed, connected, and operational. All services were tied in through existing infrastructure. Outstanding parts were scoped and quoted separately, giving the operator a clear picture of next steps rather than a surprise invoice.
