A Convotherm chicken cooker at a Victoria Park supermarket had been throwing low water warnings and refusing to run a clean cycle. For a busy food service operation, that unit coming off line during a service period is not a minor inconvenience. It is a food safety exposure and a lost trading window.
What Was Happening
The oven had stopped reading water flow correctly. What looked like a pressure issue turned out to be a combination of blocked internal water lines, a failed solenoid valve, and a relay board that had given up. On top of that, the site's water supply to the oven was running hot instead of cold. Hot water into a combi shortens its working life and makes the clean cycle less effective. The oven had been working against itself.
How It Was Handled
PEMS attended across multiple visits to diagnose correctly before replacing parts. The water assembly was stripped, drain blockages cleared, hoses and the solenoid replaced, and the relay board renewed. Each visit was documented. The store manager was also advised to log a separate plumbing job to correct the water supply temperature. That advice mattered. Replacing parts without fixing the supply would have put the same oven back under stress.
The Result
The Convotherm was returned to full operation with a clean cycle completed on site. The operator received full documentation of parts replaced, findings at each visit, and a clear handover note flagging the outstanding plumbing item.
Why PEMS
The fault required several visits to resolve correctly. PEMS documented each stage and did not close the job until the oven had been verified operational. The plumbing advisory meant the operator had a complete picture, not just a repaired unit.
