A leading food service group at Secret Harbour had a Convotherm chicken cooker that had stopped draining fat correctly. Fat disposal on a high-volume chicken cooker is not a background issue. When it fails, it affects food safety compliance, it affects kitchen hygiene, and it affects how long that piece of equipment keeps running.

What Was Happening

The grease separator was clogged. Fat from the chicken cooker had no clear path out. The drain lines had built up to the point where the system stopped functioning. The floor around the unit needed attention. There were also electrical supply issues at the power outlet serving the equipment, which had to be coordinated with the site's electrical team before the job could be fully closed.

How It Was Handled

The technician stripped and cleaned the grease separator, cleared all drain lines, and redirected pipework to restore proper fat disposal. A new grease separator was fitted, along with a weatherproof plug top to address the power outlet issue. Because the electrical side required a separate trade to move and reconnect, the drain pipe was left off safely pending that handover, with clear notes left for the returning electrician. The floor was cleaned before sign-off.

The Result

The chicken cooker was back in correct working order once the electrical trade completed their scope. The operator received full documentation of what was found, what was replaced, and what the handover to the electrician covered. Nothing was left undocumented.
