A major supermarket in Yanchep opened its deli and bakery production kitchen in late 2023. Getting it right from day one was not optional.
What Was Happening
A full commercial kitchen fitout covering deli ovens, rack ovens, planetary mixers, deli slicers, wrappers, provers, and revent ovens was being installed across multiple days. Equipment of this scale and variety needs more than delivery and a plug-in. Each piece had to be built, levelled, commissioned, and tested before a single product could move through the line.
How It Was Handled
PEMS ran a multi-technician installation across two weeks, fabricating and fitting custom flue work for the rack oven, building out the prover and revent units from flat-pack, setting deli ovens onto stands and levelling them to rack height, and commissioning slicers and wrappers in sequence. Every stage was signed off on completion. The final session covered full operational testing before handover documentation was signed by the operator.
The Result
The kitchen went live with every piece of equipment tested, documented, and cleared for production. The operator received signed handover paperwork covering the full scope. No outstanding items. No punch-list carried forward.
