The cafe kitchen at the City of Mandurah's MARC facility runs hard. Fryers in a busy public venue mean hot food on demand across a full trading day. When multiple fryers started dropping out of temperature, the kitchen team needed answers fast and a clear plan forward.

What Was Happening

Two of the cafe fryers had developed faults that were affecting their ability to hold cooking temperature reliably. One unit had a failed gas valve and a worn component that controls the pilot flame. Another had a separate fault in the same ignition and temperature-sensing system. Both faults meant unpredictable heat, inconsistent food results, and the risk of a fryer dropping out mid-service without warning.

How It Was Handled

PEMS technician Andrew attended across two service visits in January. The first visit addressed the gas valve and ignition component on Fryer 3, with a follow-up part ordered same day once a secondary fault was confirmed. The return visit completed the repair, recalibrated the thermostat, verified heat cycling, and adjusted burner output. The repair was tested through full function before handover to kitchen staff. Andrew also documented additional fryer issues identified during the visit, flagged in the service report for scheduled follow-up rather than left unrecorded.

The Result

Both fryers returned to full operation with verified temperature accuracy. The kitchen team received a documented handover. Identified future maintenance items were captured in the service report, giving the City of Mandurah a clear picture of upcoming work rather than a surprise callout.

Why PEMS

The secondary fault was caught during the first visit and ordered before leaving site. That decision turned a potential third callout into a single follow-up, keeping the repair timeline tight and the kitchen back in service without extended downtime.

Operators managing public venue kitchens across the Mandurah and Peel region are welcome to contact PEMS to discuss scheduled maintenance coverage. Call 08 7095 3550 or visit pemservices.com.au.
