A commercial kitchen shutdown at Mandurah Bowling Club put the canteen out of action during what should have been a busy service period. The club, operated under the City of Mandurah, relies on its fryer equipment to feed members and guests throughout the week. With Fryer 1 completely down, the kitchen could not operate at full capacity.
The Fault
The fryer had developed a failure in the gas control valve, which was preventing the burner from operating correctly. A worn thermocouple was also identified during the inspection, meaning the fryer could no longer accurately sense or regulate temperature. Left unaddressed, a faulty thermocouple on a commercial gas fryer creates both a food safety risk and a potential overtemperature hazard above the 220C threshold.
The Repair
PEMS technician Andrew attended Mandurah Bowling Club and carried out a full repair on Fryer 1. The faulty gas control valve was removed and replaced with a new part, and the worn thermocouple was swapped out with a new leaded terminated unit from the Minisit kit. Following the component replacements, Andrew conducted thorough gas leak testing and checked for oil leaks across the unit. Function testing confirmed the fryer was heating correctly, cycling as expected, and holding calibration temperature accurately before handover to staff.
The Outcome
Fryer 1 was returned to full working order and handed back to the Mandurah Bowling Club canteen team. The kitchen was able to resume normal service with confidence that the equipment was operating safely and within correct temperature parameters.
