The cafe kitchen at Mandurah's aquatic and recreation centre runs hard. Three commercial fryers in a busy public facility, serving the kind of continuous trade that does not leave much room for downtime. Grease buildup in the extraction flues above fryers is not dramatic until it is. Then it is a fire risk, a compliance issue, and a kitchen out of service.

What Was Happening

Grease and oil had built up inside the exhaust flues on all three fryers. That kind of accumulation is gradual and easy to miss in daily operations. Left unaddressed, it creates a fire hazard directly above working fryers, and it will eventually show up on a compliance inspection. The facility had arranged for an early-morning clean before the kitchen opened, with fryers emptied by staff ahead of the visit.

How It Was Handled

The job was scheduled for 5:30am on a Monday, outside trading hours, to avoid any disruption to the cafe. The flues were removed, cleaned down, and reassembled on all three units. Each fryer was tested before the technician left. The team also flagged that the extraction hood above the fryers had no grease gutter fitted, meaning oil was falling back into the fryers rather than being captured. That was documented and raised with staff directly.

The Result

All three fryers were operational before the facility opened. The flue cleaning was completed to a documented standard, and the grease gutter issue was recorded and communicated to the operator so it could be addressed through the correct channel.
