A contract catering operation at a South Metropolitan TAFE campus in Bentley needed a commercial passthrough dishwasher replaced. The kitchen serves a student and staff population across regular service periods. Getting the dishwasher out, a new one in, and the kitchen back to work without leaving loose ends was the job.
What Was Happening
The existing dishwasher had reached the end of its serviceable life. The replacement unit was ready to go in, but the job was not a straight swap. The sink needed to be disconnected and refitted. The old machine needed removal and disposal. And once the new unit was installed, a bench fit issue needed to be identified and communicated before it became someone else's problem.
How It Was Handled
The PEMS technician stripped the sink and bench, removed the old dishwasher, and installed and commissioned the replacement unit. On testing, it became clear the new dishwasher was narrower than the original. Rather than leave the bench gap undocumented, the technician flagged it directly to the site maintenance team and sent the details through to the catering equipment supplier so the modification could be planned and quoted properly.
The Result
The new dishwasher was installed, tested, and handed over operational. The bench modification requirement was documented and communicated to the right people before the technician left site. The operator had a clear picture of what was done and what needed to follow.
Why PEMS
When a detail does not fit the original scope, PEMS documents it and routes it to whoever needs to act. The operator does not find out about the gap six weeks later.
