A Kalamunda supermarket deli was leaking fat from the front of its chicken cooker.
The unit, a double Roastrunner, was mid-cook when the fault was logged. Water and grease were tracking down the front of the oven and onto the floor in the deli preparation area. The asset had been in service long enough that the door seal had torn and the floor drain sieves were blocked and in need of replacement.
What Was Happening
The door seal failure meant hot fat and condensate had nowhere to go except onto the floor. With chickens actively cooking, the site could not simply pull the unit from service. The drain sieves in the floor were also beyond serviceable condition. Left unaddressed, a leaking hot oven in a food preparation area is both a food safety and a workplace safety issue.
How It Was Handled
Mason attended the following day, within the target attendance window. With the unit running, he waited for the cook cycle to complete before carrying out a full inspection. The torn door seal and the condition of the drain sieves were confirmed and documented on the day. Parts were ordered and a return visit was scheduled. The site was not left without a documented next step.
The Result
The operator received a clear service record covering the inspection findings, parts required, and scheduled return. Nothing was left open-ended. The deli continued operating with a documented fault trail the facilities team could report against.
Why PEMS
