A supermarket bakery running without a working prover retarder loses more than one batch of bread.
It loses the whole morning's production schedule.
What Was Happening
A major supermarket in Yanchep had two prover retarders down in the bakery preparation area. The units were not holding temperature. Without them running, the bakery cannot proof and retard dough on cycle. Morning production depends entirely on these units doing their job overnight and into the early shift.
How It Was Handled
PEMS attended site and found the refrigerant circuit had lost pressure. A leak seal was applied, refrigerant was recharged, and the system was pressure tested to confirm the repair was holding before the job was closed. The work order was documented against the asset tag numbers, with the fault, treatment, and test result all recorded. Nothing was left open-ended.
The Result
Both units were returned to service with a verified pressure test on record. The bakery team had documented confirmation the repair had been carried out correctly, not just that a technician had attended.
Why PEMS
Every repair PEMS carries out is closed against an asset record, not just a work order number. When a food service auditor asks what was done and when, the answer is in writing.
A supermarket bakery is not a place where approximate fixes work. If your current contractor is closing jobs without documented test results, that is a gap worth closing before an audit asks the question first.
